What pieces will I get when I order a whole or half animal? 

 

 

   We will butcher the meat according to your explicit instructions - roasts, chops, ground, sausage, smoked, (no nitrates or nitrites or preservaties) etc.,  Please click below and print out the cut sheet for the type of meat you desire.  Note the chart explaining the various named cuts of meat.  For some parts of the animal these choices are X or Y not both.  If you have questions, call us to clarify the chart.  Then fax the cut sheet back to us and we will follow your directions.
